Barrel-Aged Old Fashioned Service

Garnish: Orange peel & Cherry

Initial Barrel-Aging Procedure
Refilling Barrels and Batching for Service
  1. Temper your 2x2 ice cube on a side plate, this allows it to become clearer and keeps it from cracking

  2. Measure 3oz of batched BA Old Fashioned into Mixing Crystal glass without ice

  3. Fill with ice, important to add spirit first so you are not introducing melted ice water to the drink. We need that time in the ice to chill and dilute

  4. Stir for 15 seconds with a bar spoon

  5. Strain over crystal clear 2x2 ice cube

  6. Express the oils from an orange peel over the top of drink and wipe around the rim of glass.

  7. If you damaged the orange during the process, use a new one to garnish the drink

  8. Garnish with black cherry and orange peel

  9. Notice how the orange is rolled and placed on top of the cube alongside the cherry, do not use a skewer
