  • Glass: rocks glass

  • Garnish: fresh sage and orange peel on skewer

Honey sage syrup

.5oz

Angostura Bitters

3 dashes

Hardwood smoke

Procedure

  1. Light hardwood chips and rinse glass with water and cover light wood chips

  2. Place all ingredients into mixing glass with ice and stir for 15 sec

  3. Remove glass from smoke and add large cube

  4. Strain over single cube

  5. Garnish with orange peel and sage leaf on a skewer

Honey Sage Syrup

  1. place 7 fresh sage leaves in cambro

  2. Add 1 cup of hot water from coffee machine

  3. Steep for 2 minutes

  4. Add 1 cup of honey, stir

  5. Portion into 75oml glass bottle
