Peach Puree

1 bag frozen Peach slices thawed

  1. Place Thawed Peaches in a 8qt cambro

  2. Using an Immersion/Stick blender or robot coupe blend to a smooth puree, no chuncks

  3. Should be smooth consistency

  4. Add 16oz of Real brand peach puree

  5. Add 10oz Mezcal

  6. This must stirred and portioned immediately into pour bottles. As it will separate.
